Our Favorite Sunday Morning Chocolate chip Pancakes

Every Sunday morning, my kids ask for these pancakes.

Fair warning: Once you make these pancakes, you will only want these pancakes! And that’s the truth for my kids. Any time they have pancakes anywhere else…they always compare them to mine- and mine are always better!!

And honestly, these aren’t hard to make and don’t take a lot of time. So I really don’t mind whipping these up on weekends, especially when I can use my own organic ingredients.

These pancakes are easy to make and turn out great every time. I like to use coconut sugar instead of white sugar- mostly for the reason that it has a lower glycemic index. Basically what that means is it doesn’t spike your blood glucose like white sugar would. Plus, we add chocolate chips and they add a nice sweetness. My kids have never noticed!

My biggest piece of advice for this recipe would be to make sure you AVOID over-mixing. I have done it and the pancakes don’t turn out as fluffy as they are supposed to. You want to mix the batter until it is just combined. Follow the steps below and you will end up with fluffy, yummy pancakes the whole family will love.

Sunday Morning Pancakes

  • 1 cup flour
  • 2 1/2 tablespoons coconut sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons melted butter
  • 1 1/4 cup milk
  • 1 tablespoon vanilla
  • 1 egg
  • Chocolate chips

Directions

  1. Heat frying pan over medium heat or heat a griddle at 350F.
  2. In a bowl, combine flour, coconut sugar, baking powder and salt. Mix with a whisk.
  3. Add butter, milk, vanilla and egg into the bowl with dry ingredients. Mix with a spatula until just combined. DO NOT OVERMIX! This is the secret to fluffy pancakes!
  4. Ladle pancake mix on to hot greased griddle, topping each pancake with chocolate chips if desired.
  5. Flip when bubbles start to appear.
  6. Cook for another 2-3 minutes, or until cooked throughly.
  7. Top with your favorite syrup/butter and enjoy!
